Luke is an absolute pasta lover. Unfortunately, regular pasta is one of the foods that cause major spikes in his blood sugar. Shortly after diagnosis, I found Carba-Nada Pasta at Meijer. There are only 24g of carbs in 1/5 of the bag! It’s pretty tasty, too!
Speaking of pretty tasty, I found an amazing recipe for Lemon Asparagus Pasta with Grilled Chicken from the Dinner at the Zoo blog a couple of weeks ago. I finally got around to making it. Oh. My. Goodness. It is so delicious!
This meal is the perfect combination of protein and veggies. When you use Carba-Nada pasta, it’s a pretty low-carb meal considering it’s pasta! (Bonus: It’s really easy to make, too!)
The proof, however, is on the Dex graph. Luke ate around 5:30 p.m.
Not too shabby, eh? Now, if I could get that company to make some low-carb mac & cheese. Luke would be in pasta heaven!
